Species Details

Essential characteristics
This is a beautiful, powerful and lively animal, of the cod family, well known only in some fishing ports of northern Spain, while in the interior good fishmongers regularly trade it. Reaches good size. What draws attention to it are its beautiful metallic green and blue colors, especially when very fresh.


Differential Elements

The lower jaw protrudes from the top. It has no barbels on the chin. The black lateral line curves toward the back at the height of the ventral fins.


Confusion, errors, fraud and related species

Easily confused with the saithe (Pollachius virens), although it has a small chin, which sets it apart.

Weights and measures
Biological sizes: Max .- 130 cm. Common - No more than 75 cm.
Minimum sizes: Biscay and north and the Gulf of Cadiz .- 30 cm.

Places and gear
Usually caught in the northwest Atlantic by pelagic trawl and bottom nets.

Culinary and gastronomic values
It has a fleshy structure, very delicate, somewhat dark, firm and pleasant taste. Be very careful to watch the temperature and cooking time when preparing as the meat dries easily. Therefore, it is also advisable to cut it thick, better 1 piece of 100 g. that 2 of 50g. Protection with flour, batter and breadcrumbs is also good advice to follow. The reason is that it has low content of gelatin, as opposed to cod. The best advice that can be given is to finish cooking side dishes, sauces and other items and when they are ready, spend a few minutes preparing it before taking it to the table. Fans prefer to eat the head with its neck.
